Today is the last recipe on my brunch menu. We’ve had scrambled tofu bake, dill hashbrowns, applesauce coffeecake, and champagne cocktail mimosas. Now it’s time for light, fluffy, blueberry pancakes. Make the batter the night before, and cook ‘em on the griddle the next morning. They are great for brunch, or even a weekday breakfast!
